The Pullman Table is a new concept from The Premier Rail Collection that invokes the service standards, culinary innovation and ambiance set forth by The Pullman Company at the turn of the century. The perception of dinner trains in 2015 will be injected with new life as The Pullman Table brings a farm-to-table philosophy to Premier Rail Collection venues and their respective dining products.
For many years – and still today – railroads played an integral role in moving freshly grown ingredients and regional agriculture around the country. The Pullman Table will tell the tale of those goods right in the region from which they originate through expertly crafted dishes paired with local craft beer, wine and spirits. This approach invites passengers to literally and figuratively get a taste of what each region is made of.
Guests can expect all previous notions of dining by rail to be cast aside as The Pullman Table brings regional New American Cuisine to our movable restaurant, allowing guests to take in the passing landscape rich with the bounty they now find at their table.
